Single-Serving Sweet Potato Casserole

Steps

1. Poke holes all over the sweet potato with a fork. Microwave at 600W for 6–7 minutes until a fork slides in with zero resistance. Let it cool 2 minutes so it's safe to handle.
2. Preheat the oven to 175°C.
3. Slice the sweet potato open and scoop the flesh into a mixing bowl. Mash with the melted butter, milk, and maple syrup until smooth. Stir in the salt and cinnamon — taste and adjust sweetness.
4. Spread the mash into the ramekin. The consistency should be thick like a pumpkin pie filling — spreadable but not runny.
5. Bake 25 minutes until the edges are bubbling and the top has firmed up.
6. Pull the ramekin, scatter the mini marshmallows across the top, and return to the oven for 8–12 minutes until golden and toasted. Done with the oven. Serve hot.
